Hello my friends! I still don't have a working printer so I thought until I'm able to print the rest of my photos for my Winter theme pages I'd share a fun post on one of my favourite things - simple salads! :)
I could eat a salad pretty much Every. Single. Day! For me they are the fastest and easiest meal to make. You can toss in whatever you have on hand, top with some dressing and voila, you are ready to eat!.
To start building my salads I add an ingredient or two from my Base list below, followed by as many Toppings and Extras as I want. I then top the salad with either a store bought or homemade dressing and I'm done!
Here's my go-to ingredient list for pulling any salad together in minutes.
The Base (one or more of these)
- any kind of lettuce (mixed greens, kale, spinach, romaine)
- brown rice
- red lentils
- rice noodles
Toppings (as many of these as you'd like)
- snap peas
The Extras (again, as many as you fancy)
- dried cranberries
- cheese (feta, goat, cheddar)
- nuts (almonds, pine, walnuts, peanuts)
- seeds (pumpkin, sesame)
- beans (black, red)
- chickpeas (roasted or not)
- fresh cilantro
The Dressing (when I don't want to make my own)
- poppy seed mustard (from the Calgary Farmers Market)
- champagne vinaigrette (Nordstrom)
- ginger sesame dressing (Nordstrom)
For even faster salads, I pre-wash and chop much of my ingredients days in advance and place them in these glass containers from Ikea and refrigerate for later use.
Here's a tip for keeping your chopped vegetables fresh and crisp.
Store your pre-chop veggies like carrots or celery in a glass container (the Fortrolig line from Ikea is perfect) and fill with water. You will need to keep the water fresh and change it every few days, but it's worth it because your veggies will stay amazingly fresh and crisp for a really long time.
